Shrimp and Avocado Salad

This is a refreshing salad that is very good for you. If you like your food spicy you can add more cayenne pepper. It would also be good with Salsa instead of the dressing ingredients. I like using smaller shrimp so every bite has a little of all the flavors.

Ingredients

 1 pound shrimp, cooked and shelled
 2 cups chopped romaine lettuce
 1 avocado, sliced
 1 Tablespoon olive oil
 1 Tablespoon lime juice
 Pinch of cayenne pepper
 1 Tablespoon finely chopped red onion
 1/4 teaspoon salt
 Freshly ground pepper

Directions

Combine everything but the lettuce, stir to coat completely and let rest for five minutes. Add the chopped lettuce, stir and serve. Can be refrigerated for up to an hour.

Serves: 4
