Poorboy Mushroom Drops

My diet does not include many fried foods any more, but this is one exception I still allow myself. These are crispy on the outside and moist in the middle with a nice mushroom flavor. The golden mushroom soup is different than the standard kind and is well worth searching out.


 1 can Golden cream of mushroom condensed soup
 1 egg beaten
 1/4 pound white crackers (crushed)
 1 can mushrooms (pieces) drained
 vegetable oil (for frying)


Heat oil in a pan until it just starts shimmering. I use a narrow pan so less oil is needed. Crush white crackers (I put them into a ziptop bag and crunch them in my hands) then mix everything together and drop by spoonfuls into hot oil. Fry until golden brown and delicious. Drain on paper towels. Serve warm.
