Cuddle Mug Soup

No matter how far south I take my RV in the winter there are days when even a slight chill in the air makes me think of warm comfort food like a mug of hot brothy soup warming me from the inside out all the way down to my toes. This is a simple soup that goes from pantry to mug with only a short time in the microwave or on the stove top. Any leftovers keep in the fridge for days and can be heated one mug at a time whenever you want.

Ingredients

1 can tomato or V-8™ juice
 1 can beef broth
 Worcestershire sauce to taste
optional serve with cheese and crackers or rustic bread on the side

Directions

Combine the tomato juice, beef broth and a dash of Worcestershire sauce then heat in the microwave or in a sauce pan on the stove. Serve in mugs. This is best shared with friends over a good conversation on a cold night with a little cheese, crackers or rustic bread on the side.

You may notice that some of our recipes do not contain exact measurements for all ingredients. Cooking on the road is an art more than a science. We view each recipe as only a suggestion - a starting point for your own personal creativity.

We aren't usually dealing with food chemistry in these recipes since we aren't baking with leavening, etc., so feel free to use as much or as little of any suggested ingredient. Be creative and imaginative! Substitute the foods you like or have available for the ones in the recipes. And if you find something that turns out well for you, please share it with the rest of us.
